Reservations opened on Tock at 9 a.m. on January 26 for the $1,500-per-person tasting menu (only available to book in multiples of two), and, by 9:04, a banner read “Noma LA 2026 has sold out.” (An Eater staffer reported Tock having page loading issues as early as 9 a.m.) The residency will run from March 11 to June 26 at an undisclosed location in Silver Lake; the cost includes a hospitality fee, tax, and beverage pairing. Rene Redzepi confirmed the residency sold out entirely in an Instagram story.

Redzepi first announced Noma’s Los Angeles residency in July 2025, followed by additional details in mid-January 2026, including the cost and reservation information. Alongside the residency, Noma will also operate a Noma Projects pop-up in Silver Lake and Redzepi plans to host events with Mad, his non-profit focused on sustainability.

Although the initial response to Noma’s residency has mostly been positive, the price of the meal provoked more mixed feedback, with commenters across Instagram and Reddit expressing outrage at the high cost. Redzepi told the Los Angeles Times that the $1,500 price tag comes in part from costs associated with transporting 130 people from Copenhagen for the residency, covering their lodging, and, in some cases, schooling for staff members’ children. Alongside the regular reservations, Noma will offer an “industry table” to host up-and-coming hospitality professionals under 25 free of cost; applications for the industry table are now open

Noma also announced a surprise pop-up on January 26 at Courage Bagels. From 12 to 2 p.m., Noma’s test kitchen will serve sea salt sesame bagels topped with oyster mushrooms, pumpkin bushi, black pepper, savory rose fudge, nasturtium, and bergamot for $25. Only 250 bagels will be available.

Orange County’s robust dining scene has been on a steady rise with big-name newcomers, very familiar chefs, and buzzy strip mall finds alike. The county, some 3.5 million people strong, was already known for its taquerias, Vietnamese food, and coastal dining enclaves. Still, the region is growing in seemingly a dozen new directions at once. […]

Bäco Mercat wasn’t the first Josef Centeno restaurant I fell in love with (that’s Lot 1), though it’s probably the one I’ve missed most — a low-key hangout rooted in puffy, pita-adjacent flatbread surrounding all manner of flavorful fillings. Centeno’s revived it (sort of), along with the more recently closed Tex-Mex favorite, Bar Ama, and […]
